Occasionally we’re stopped in our tracks when we discover a find so fabulous, that everything else comes to a screeching hault…well, it’s happened again! If you’re not familiar with the name, Dr. Andrew Weil M.D., you’re in for a treat.  You may have seen his name on the Origins skin care line, or the spa~rific, Miraval Resort in Tucson, Arizona! Oprah and her best friend, Gale stayed there for a weekend, and became familiar with Dr. Weils integrative wellness program there.  It’s worth YouTube~ing, let’s just leave it at that!

Dr. Weil is one of the most advanced doctors of his kind…he specializes in balanced living, aging gracefully, the “Anti-Inflammatory Diet,” and now…restaurants!  Have you ever been conflicted when choosing what to order, trying to find a balance between flavor and feeling satisfied?  We have! It’s becoming more and more difficult finding healthy options when dining out, without sacrificing flavor!  Dr. Weil decided to take everything he knew and create the most fabulous, addicting and non~guilty pleasure, eatery we’ve stumbled across in a long time!

Here are a few of his most notoriously famous dishes…

Grass Fed Bison Burger with Kale Salad and Sweet Potato Hash

Edamame Dumplings with Daikon Radish and White Truffle Oil

Spicy Shrimp and Asian Noodles

He has locations in Arizona and Southern California as of now, but we hear there are plans to expand in the very near future!  For those of you who live at a distance, we want so badly for you to understand our obsession with Dr. Weil’s dishes, so we’ve included his famous, Chocolate Pudding recipe here for you to try!  

True Food Kitchen Chocolate Pudding

 
1 c Cocoa Powder

1.5 T Cornstarch

2 c Raw Cane Sugar

4.5 c Soy Milk

12 oz Organic Chocolate

1 T Vanilla Extract

1 T Cinnamon

In a large pot, combine cocoa, cornstarch and sugar. Mix with a whisk and slowly pour in 3 cups of soy milk. Mix until smooth paste forms. Add remaining soy milk once all of the lumps are gone. Place over medium high heat and continue to stir until it simmers and thickens. Remove pot from heat and continue to stir for 2 more minutes. Add chocolate, vanilla and cinnamon and whisk to combine and strain through a fine chinois. Cover with plastic wrap on top to keep a skin from forming. Chill 4 hours.
